To your main question, the metrics you're looking for are Application > SSL > Request Goodput Bytes and Response Goodput Bytes. That will (mostly) reproduce the chart from your screenshot.
I say "mostly" because your question brought to light that the chart in the screenshot is incorrectly charting Request Goodput Bytes. If you mouse over the 0 line, you'll see Response Bytes is a lighter orange line, always @ 0. We'll open a defect on that. But you won't have that issue charting the metrics in a Dashboard chart.
To your observation about trigger metrics, note that we're in a transition state for SSL L2-L4 metric names. They're currently identified in the product (triggers and records) as "request" and "response" metrics, when it's more accurate to say we're measuring client(-sent) bytes or server(-sent) bytes. In 6.1, we added the "client" and "server" names and deprecated the "req" and "rsp" forms. (See here.) You can see from your trigger debugging that "rsp" metric names map to "server" metrics. Likewise, "req" is becoming "client".
